Lasagna Soup

🍲 Lasagna Soup

First time making but won’t be the last. I don’t think I have ever made a soup with more flavor! 😋

Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can diced tomatoes
  • 6 cups chicken or beef broth
  • 2 tsp Italian seasoning
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • 8–10 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt & pepper, to taste
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil and cook onion until soft. Add garlic and cook for 1 minute.
  2. Add ground beef or sausage and cook until browned. Drain excess fat if needed.
  3. Stir in crushed tomatoes, diced tomatoes, broth, Italian seasoning, basil, red pepper flakes, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  4. Add broken lasagna noodles to the pot and cook until tender, about 10–12 minutes.
  5. In a small bowl, mix ricotta, mozzarella, and Parmesan cheese.
  6. Ladle soup into bowls, top with a scoop of the cheese mixture, and garnish with fresh herbs.

Result: A hearty, cheesy, and flavor-packed soup that tastes just like lasagna in a bowl!
