Lasagna Soup

🍲 Lasagna Soup
First time making but won’t be the last. I don’t think I have ever made a soup with more flavor! 😋
Ingredients
- 1 lb ground beef or Italian sausage
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz) can diced tomatoes
- 6 cups chicken or beef broth
- 2 tsp Italian seasoning
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- 8–10 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt & pepper, to taste
- Fresh parsley or basil, chopped (for garnish)
Instructions
- In a large pot, heat olive oil and cook onion until soft. Add garlic and cook for 1 minute.
- Add ground beef or sausage and cook until browned. Drain excess fat if needed.
- Stir in crushed tomatoes, diced tomatoes, broth, Italian seasoning, basil, red pepper flakes, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes.
- Add broken lasagna noodles to the pot and cook until tender, about 10–12 minutes.
- In a small bowl, mix ricotta, mozzarella, and Parmesan cheese.
- Ladle soup into bowls, top with a scoop of the cheese mixture, and garnish with fresh herbs.
