🍖 Classic Pot Roast with Potatoes & Carrots 🥔🥕

Tender beef chuck roast slow-cooked to perfection with hearty potatoes and sweet carrots.

✨ Ingredients:

  • 3 lbs beef chuck roast (Halal-certified) 🍖
  • 2 tbsp olive oil
  • 1 large onion, chopped 🧅
  • 3 garlic cloves, minced 🧄
  • 3 large carrots, peeled & cut into chunks 🥕
  • 2 lbs baby potatoes, halved 🥔
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme 🌿
  • 1 tsp rosemary 🌿
  • Salt & pepper to taste 🧂

🥘 Instructions:

  1. Season the beef with salt and pepper. Sear in olive oil until browned on all sides.
  2. Add onion and garlic to the pot, sauté until fragrant.
  3. Stir in tomato paste, thyme, rosemary, and beef broth.
  4. Add carrots and potatoes, cover tightly, and cook:
    • Oven: 325°F (160°C) for 3–4 hours
    • Slow cooker: Low 8 hours / High 5 hours
  5. Once fork-tender, shred the beef and serve with veggies and sauce. 🌿
