Irresistible Pistachio Olive Oil Cake


🍰 Irresistible Pistachio Olive Oil Cake

Moist, fragrant, and naturally rich, this pistachio olive oil cake
is perfectly balanced with nutty flavor and a tender crumb.
Elegant enough for guests, yet easy enough for everyday baking.

Ingredients

  • 1 cup shelled pistachios, finely ground
  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • ¾ cup extra virgin olive oil
  • ½ cup milk or yogurt
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a round cake pan.
  2. In a bowl, whisk flour, ground pistachios, baking powder, and salt.
  3. In another bowl, beat eggs and sugar until pale and fluffy.
  4. Slowly whisk in olive oil, milk (or yogurt), vanilla, and lemon zest.
  5. Fold dry ingredients into wet mixture until just combined.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 40–45 minutes, until a toothpick comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a rack.
Tip: Finish with a dusting of powdered sugar or a light honey drizzle
and chopped pistachios for extra flavor and presentation.
