Ingredients:

  • 25 ounces of leftover shredded chicken or canned chicken
  • 1 teaspoon Dijon mustard
  • 1 large egg
  • 1/8 teaspoon dried thyme
  • 1/4 cup breadcrumbs
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • Oil for frying (enough to coat the bottom of the pan)

Instructions:

  1. Prepare the Chicken Mixture: In a large bowl, combine the shredded chicken, Dijon mustard, egg, dried thyme, breadcrumbs, onion powder, garlic powder, salt, and pepper. Mix thoroughly until all the ingredients are well incorporated.
  2. Form the Fritters: Using your hands or a spoon, shape the mixture into small patties or fritters.
  3. Heat the Oil: In a large frying pan, heat oil over medium-high heat.
  4. Cook the Fritters: Fry the fritters in small batches, cooking each side for 3-4 minutes, or until they are golden brown and crispy.
  5. Drain and Serve: Remove the fritters from the pan and place them on a plate lined with paper towels to drain any excess oil. Serve hot with your favorite dipping sauce and enjoy!
