Impossible Coconut Custard Pie 🥥✨
It “makes its own crust” in the oven—like magic!
Ingredients
- 1/2 cup Bisquick
 - 3/4 cup sugar
 - 4 large eggs
 - 2 cups milk
 - 1 cup flaked coconut
 - 1 tsp vanilla extract
 - 1 tbsp butter, softened
 
Instructions
- Preheat oven to 400°F / 205°C. Butter a 9-inch pie pan.
 - Combine all ingredients in a large bowl (or blender) and mix until smooth and well blended.
 - Pour into the prepared pan and bake 25–30 minutes, until the custard is set and the top is lightly golden.
 - Cool completely. As it cools, the pie will separate into a tender crust, creamy custard, and toasty coconut top. Slice and enjoy.
 
Pro Tip
If you’re out of Bisquick, make a quick substitute: mix 1 cup flour, 1½ tsp baking powder, ½ tsp salt, and 1 tbsp oil or melted butter. Use 1/2 cup of this blend for the recipe and save the rest.
- For deeper coconut flavor, toast 1/4 cup of the coconut and sprinkle on top before baking.
 - Delicious chilled with a dollop of whipped cream.
