Impossible Coconut Custard Pie 🥥✨

It “makes its own crust” in the oven—like magic!

Ingredients

  • 1/2 cup Bisquick
  • 3/4 cup sugar
  • 4 large eggs
  • 2 cups milk
  • 1 cup flaked coconut
  • 1 tsp vanilla extract
  • 1 tbsp butter, softened

Instructions

  1. Preheat oven to 400°F / 205°C. Butter a 9-inch pie pan.
  2. Combine all ingredients in a large bowl (or blender) and mix until smooth and well blended.
  3. Pour into the prepared pan and bake 25–30 minutes, until the custard is set and the top is lightly golden.
  4. Cool completely. As it cools, the pie will separate into a tender crust, creamy custard, and toasty coconut top. Slice and enjoy.

Pro Tip

If you’re out of Bisquick, make a quick substitute: mix 1 cup flour, 1½ tsp baking powder, ½ tsp salt, and 1 tbsp oil or melted butter. Use 1/2 cup of this blend for the recipe and save the rest.

  • For deeper coconut flavor, toast 1/4 cup of the coconut and sprinkle on top before baking.
  • Delicious chilled with a dollop of whipped cream.
