Honey Cranberry Chicken Bake with Goat Cheese 🍯🍗
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1/3 cup honey
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 cup fresh or frozen cranberries
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- 4 oz (115 g) goat cheese, crumbled
- 2 tablespoons chopped parsley (for garnish)
Directions
- Preheat oven to 400°F (200°C). Grease a baking dish lightly with olive oil.
- Pat chicken dry and season with salt and pepper.
- Whisk honey, Dijon, garlic, balsamic vinegar, and thyme together in a bowl.
- Place chicken in the baking dish and pour sauce evenly over it.
- Add cranberries around the chicken, drizzle olive oil on top.
- Bake for 25–30 minutes until chicken reaches 165°F (74°C).
- Top with crumbled goat cheese, then bake another 5 minutes.
- Garnish with parsley and serve warm with your favorite sides.
