Honey Cranberry Chicken Bake with Goat Cheese 🍯🍗

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1/3 cup honey
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 cup fresh or frozen cranberries
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 4 oz (115 g) goat cheese, crumbled
  • 2 tablespoons chopped parsley (for garnish)

Directions

  1. Preheat oven to 400°F (200°C). Grease a baking dish lightly with olive oil.
  2. Pat chicken dry and season with salt and pepper.
  3. Whisk honey, Dijon, garlic, balsamic vinegar, and thyme together in a bowl.
  4. Place chicken in the baking dish and pour sauce evenly over it.
  5. Add cranberries around the chicken, drizzle olive oil on top.
  6. Bake for 25–30 minutes until chicken reaches 165°F (74°C).
  7. Top with crumbled goat cheese, then bake another 5 minutes.
  8. Garnish with parsley and serve warm with your favorite sides.
