Ingredients
- 1 lb ground beef or beef stew meat
- 1 onion, chopped
- 3 potatoes, diced
- 2 carrots, sliced
- 1 cup green beans
- 1 cup corn
- 1 cup peas
- 1 (14 oz) can diced tomatoes
- 6 cups beef broth
- 2 tbsp tomato paste
- Salt and black pepper, to taste
- 1 tsp garlic powder
- 1 tsp paprika (optional)
Instructions
- In a large pot, brown the beef over medium heat. Drain excess fat.
- Add chopped onion and cook until softened.
- Stir in potatoes, carrots, green beans, corn, and peas.
- Add diced tomatoes, tomato paste, and beef broth.
- Season with salt, pepper, garlic powder, and paprika.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 45–60 minutes, stirring occasionally.
- Taste and adjust seasoning before serving.

This soup tastes even better the next day! Serve with crusty bread or crackers.
