Hearty Vegetable Beef Soup

Ingredients

  • 1 lb ground beef or beef stew meat
  • 1 onion, chopped
  • 3 potatoes, diced
  • 2 carrots, sliced
  • 1 cup green beans
  • 1 cup corn
  • 1 cup peas
  • 1 (14 oz) can diced tomatoes
  • 6 cups beef broth
  • 2 tbsp tomato paste
  • Salt and black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp paprika (optional)

Instructions

  1. In a large pot, brown the beef over medium heat. Drain excess fat.
  2. Add chopped onion and cook until softened.
  3. Stir in potatoes, carrots, green beans, corn, and peas.
  4. Add diced tomatoes, tomato paste, and beef broth.
  5. Season with salt, pepper, garlic powder, and paprika.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 45–60 minutes, stirring occasionally.
  8. Taste and adjust seasoning before serving.
Tip:
This soup tastes even better the next day! Serve with crusty bread or crackers.
