Ingredients
- 1 lb (450 g) beef chunks or ground beef
- 2 medium potatoes, cubed
- 2 carrots, diced
- 1 zucchini or bell pepper, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup (240 ml) beef broth
- 1/2 cup (120 ml) tomato sauce or crushed tomatoes
- 1/2 cup shredded mozzarella or cheddar cheese
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried thyme or oregano
- Salt and pepper to taste
- Chopped green onions or parsley for garnish
Directions
- Preheat oven to 375°F (190°C). Lightly grease a large baking dish.
- In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté until fragrant.
- Add beef and cook until browned. Stir in tomato sauce, paprika, thyme, salt, and pepper. Simmer for 5–7 minutes.
- In the baking dish, layer potatoes, carrots, and zucchini. Pour the beef mixture evenly over the top.
- Add beef broth, cover with foil, and bake for 35 minutes.
- Remove foil, sprinkle cheese on top, and bake uncovered for another 10–15 minutes until golden and bubbly.
- Garnish with fresh parsley or green onions before serving.
Tip: For a creamier texture, mix in ¼ cup of heavy cream or sour cream before baking.
