Healthy Slow Cooker Pot Roast

Ingredients
- 3–4 lb beef chuck roast
- 1 lb baby potatoes
- 3–4 carrots, peeled and cut
- 1 onion, sliced
- 1 cup green beans (optional)
- 2 cups beef broth (low sodium)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper to taste
Instructions
- Season the roast generously with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear the roast on all sides until browned.
- Place potatoes, carrots, onion, and green beans in the bottom of the slow cooker.
- Lay the seared roast on top of the vegetables.
- Pour beef broth over everything and add garlic, thyme, and rosemary.
- Cover and cook on LOW for 8 hours or HIGH for 4–5 hours until the beef is fork-tender.
- Serve warm with the cooking juices spooned over the top.
