Hawaiian Pineapple Beef



Hawaiian Pineapple Beef

This is so delicious, it just melts in your mouth! I’m drooling just thinking about it 🤤

Ingredients

  • 1½ lbs (700 g) beef chunks or stew meat
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 1 red bell pepper, diced
  • 1 can (20 oz / 560 g) pineapple chunks, drained (reserve juice)
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp ketchup
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tsp garlic powder
  • ½ tsp ginger powder (or 1 tsp fresh grated ginger)
  • Salt and pepper, to taste
  • Fresh parsley or green onions, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add beef chunks and sear until browned. Remove and set aside.
  2. In the same pan, add onions and red bell pepper. Sauté for 3–4 minutes.
  3. Add pineapple chunks and stir gently.
  4. Whisk together soy sauce, brown sugar, ketchup, garlic, ginger, and reserved pineapple juice. Pour over beef.
  5. Return beef to the pan and simmer on low for 30–40 minutes, until tender.
  6. Add cornstarch slurry to thicken sauce. Cook 3–5 minutes more.
  7. Garnish with parsley or green onions. Serve hot over steamed rice.
💡 Tips:
• You can make this in a slow cooker — cook on LOW for 6–7 hours or HIGH for 3–4 hours.
• Add green bell pepper for extra color.
• Substitute beef with chicken or pork for variety.
