Hamburger Noodle Soup with Tomatoes and Parmesan
This hearty and comforting soup is a delicious combination of classic flavors. It’s perfect for a chilly day or a weeknight meal. The combination of ground beef, vegetables, and pasta creates a satisfying and flavorful dish that’s sure to please.
Ingredients:
- 2 cups egg noodles (or any sturdy pasta)
- 1 tablespoon extra virgin olive oil
- 1 medium onion, diced
- 1 cup sliced celery
- 1 cup sliced carrots
- 2 cloves garlic, minced
- 1 lb lean ground beef
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1/2 teaspoon seasoned salt
- Salt and pepper, to taste
- 1 envelope dry onion soup mix
- 3 cups beef broth
- 28 oz can diced tomatoes
- 8 oz can tomato sauce
- 1 tablespoon soy sauce
- 1/4 cup grated Parmesan cheese
Instructions:
- Bring a large pot of water to a boil. Salt generously, add noodles, and cook until al dente. Drain and set aside.
- In a large soup pot or Dutch oven, heat olive oil. Add onion, celery, and carrots, and cook until they begin to soften. Add garlic and cook another minute.
- Add ground beef and cook, breaking up the meat, until browned and vegetables are soft. Drain any fat if necessary.
- Stir in oregano, basil, seasoned salt, and salt and pepper to taste. Add onion soup mix, and stir for 30 seconds.
- Add beef broth, diced tomatoes, tomato sauce, and soy sauce. Bring to a boil, then lower the heat and let simmer for about 15 minutes.
- Add noodles to the soup and let them heat through for about 5 minutes.
- Serve topped with Parmesan cheese.
