π² Ham and White Bean Soup
Cozy, hearty, and full of comforting flavor, this ham and white bean soup
is perfect for chilly days or anytime you want a satisfying homemade meal.
Itβs simple, filling, and even better the next day.
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 medium stalk celery, sliced
- 1 large carrot, sliced
- 4 cloves garlic, minced
- 2 cups cooked ham, diced
- 7 cups low-sodium chicken broth or stock
- 2 bay leaves
- 1 tablespoon dried parsley
- Β½ teaspoon celery salt
- Β½ teaspoon black pepper
- ΒΌ teaspoon dried thyme (optional)
- 2 (15 oz) cans white beans, drained and rinsed
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, celery, and carrot. Cook 4β5 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add diced ham and cook 2β3 minutes.
- Pour in chicken broth and add bay leaves, parsley, celery salt, pepper, and thyme.
- Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
- Add white beans and simmer an additional 10β15 minutes.
- Remove bay leaves, taste, and adjust seasoning as needed.
- Serve hot and enjoy.
Tip: For a thicker soup, mash a small portion of the beans before adding them to the pot.
