Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 medium stalk celery, sliced
  • 1 large carrot, sliced
  • 4 cloves garlic, minced
  • 2 cups cooked ham, diced
  • 7 cups low-sodium chicken broth or stock
  • 2 bay leaves
  • 1 tablespoon dried parsley
  • ½ teaspoon celery salt
  • ½ teaspoon black pepper
  • ¼ teaspoon dried thyme (optional)
  • 2 (15 oz) cans white beans, drained and rinsed

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, celery, and carrot. Cook 4–5 minutes until softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add diced ham and cook 2–3 minutes.
  5. Pour in chicken broth and add bay leaves, parsley, celery salt, pepper, and thyme.
  6. Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
  7. Add white beans and simmer an additional 10–15 minutes.
  8. Remove bay leaves, taste, and adjust seasoning as needed.
  9. Serve hot and enjoy.
Tip: For a thicker soup, mash a small portion of the beans before adding them to the pot.
This adds creaminess without extra ingredients.
