Green Chili Chicken Enchiladas (New Way)

🌶️ Green Chili Chicken Enchiladas

New way & seriously addictive 😋
Creamy, cheesy, and packed with bold green chile flavor!

Ingredients

  • 3 cups cooked chicken, shredded
  • 1 (10 oz) can green enchilada sauce
  • 1 (4 oz) can diced green chiles
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 8–10 flour tortillas
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix chicken, half the enchilada sauce, green chiles, sour cream, and seasonings.
  3. Spoon filling into tortillas, roll tightly, and place seam-side down in a greased baking dish.
  4. Pour remaining enchilada sauce evenly over the top.
  5. Sprinkle generously with shredded cheese.
  6. Bake uncovered for 25–30 minutes until bubbly and lightly golden.
  7. Let rest 5 minutes before serving.
Want extra flavor? Add sliced jalapeños, a splash of green chile salsa, or finish with fresh cilantro.
