Green Chile Cast Iron Enchiladas 🌶️🧀

Ingredients

  • 1 lb (450 g) ground beef or shredded chicken
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cups green chile enchilada sauce (mild or spicy)
  • 1 can (4 oz / 115 g) diced green chiles
  • 1 tsp cumin
  • Salt & pepper to taste
  • 6 corn tortillas (cut in halves or quarters)
  • 1 ½ cups shredded cheese (Monterey Jack or Mexican blend)
  • Fresh cilantro, sour cream & avocado for serving

Instructions

  1. Preheat oven: to 375°F (190°C). Heat a cast iron skillet over medium heat.
  2. Cook filling: Add oil and onion; sauté until soft. Stir in beef/chicken, green chiles, cumin, salt & pepper. Cook 5–6 minutes.
  3. Assemble: Layer half the tortillas in the skillet, followed by meat mixture, a drizzle of enchilada sauce, and cheese. Repeat the layers, finishing with cheese on top.
  4. Bake: Place the skillet in the oven and bake 20–25 minutes, until bubbling and golden on top.
  5. Serve: Let rest 5 minutes before serving. Garnish with cilantro, sour cream, and avocado slices.
🔥 Pro Tip: For a smoky kick, mix a spoonful of salsa verde or chipotle paste into your enchilada sauce before layering.
