Green Chile and Cheese Quiche

This creamy green chile and cheese quiche is simple to make yet full of bold flavor. With soft custardy eggs, melty cheese, and gentle heat from roasted green chiles, it’s perfect for brunch or a cozy breakfast.

Ingredients

  • 6 large eggs
  • 1 cup heavy cream
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 cup chopped green chile (drained if canned)
  • 1 cup shredded Mexican cheese blend
  • 1 prepared pie crust (9-inch)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Whisk together eggs, heavy cream, salt, and pepper until smooth.
  3. Place pie crust into a deep 9-inch pie plate and prick bottom with a fork.
  4. Spread green chile evenly across the crust.
  5. Sprinkle cheese over the chiles.
  6. Pour egg mixture evenly over filling.
  7. Bake at 425°F for 15 minutes.
  8. Reduce temperature to 300°F (150°C) and bake 30–40 minutes until center is set.
  9. Cool 5–10 minutes before slicing.

Total Time: 55–65 minutes

Servings: 6–8 slices
