Greek Stifado

Stifado is one of Greece’s most comforting stews — rich, flavorful, and melt-in-your-mouth tender. Perfect for cozy evenings or family gatherings.

Ingredients

  • 2 lbs (900 g) beef stew meat, cut into large chunks
  • 1 lb pearl onions, peeled
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 large onion, finely chopped
  • 1/2 cup red wine (optional but traditional)
  • 1/4 cup red wine vinegar
  • 1 can (14 oz / 400 g) crushed tomatoes
  • 1 cup beef broth
  • 2 bay leaves
  • 1 cinnamon stick (or 1/2 tsp cinnamon)
  • 1/4 tsp allspice
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown the beef on all sides, then remove and set aside.
  2. Add chopped onion and garlic to the pot, sauté until soft.
  3. Return beef to the pot and pour in the red wine. Simmer 2–3 minutes to reduce slightly.
  4. Add vinegar, crushed tomatoes, beef broth, bay leaves, cinnamon, allspice, salt, and pepper.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour.
  6. Add the pearl onions and continue simmering 45–60 minutes, or until beef is very tender.
  7. Taste and adjust seasoning.
  8. Garnish with parsley and serve warm.

Notes

  • Traditionally served with rice, mashed potatoes, or crusty bread.
  • For extra richness, let the stew rest for a few hours or overnight — flavors deepen beautifully.
  • You can substitute beef with rabbit or lamb for more traditional variations.
