Greek Stifado

Stifado is one of Greece’s most comforting stews — rich, flavorful, and melt-in-your-mouth tender. Perfect for cozy evenings or family gatherings.
Ingredients
- 2 lbs (900 g) beef stew meat, cut into large chunks
- 1 lb pearl onions, peeled
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 large onion, finely chopped
- 1/2 cup red wine (optional but traditional)
- 1/4 cup red wine vinegar
- 1 can (14 oz / 400 g) crushed tomatoes
- 1 cup beef broth
- 2 bay leaves
- 1 cinnamon stick (or 1/2 tsp cinnamon)
- 1/4 tsp allspice
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium-high heat. Brown the beef on all sides, then remove and set aside.
- Add chopped onion and garlic to the pot, sauté until soft.
- Return beef to the pot and pour in the red wine. Simmer 2–3 minutes to reduce slightly.
- Add vinegar, crushed tomatoes, beef broth, bay leaves, cinnamon, allspice, salt, and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour.
- Add the pearl onions and continue simmering 45–60 minutes, or until beef is very tender.
- Taste and adjust seasoning.
- Garnish with parsley and serve warm.
Notes
- Traditionally served with rice, mashed potatoes, or crusty bread.
- For extra richness, let the stew rest for a few hours or overnight — flavors deepen beautifully.
- You can substitute beef with rabbit or lamb for more traditional variations.
