Greek Lemon Chicken & Potatoes 🥰🍋
A tender, juicy, lemony chicken dinner baked with soft potatoes and carrots — a Greek classic that never disappoints!
Ingredients:
- 4 chicken thighs or breasts
- 1 lb baby potatoes, halved
- 3 large carrots, sliced
- 4 garlic cloves, minced
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 tbsp dried oregano
- 1 tsp paprika
- Salt & black pepper to taste
- 1/2 cup chicken broth
Instructions:
- Preheat oven to 400°F (200°C).
- Place chicken, potatoes, and carrots in a large baking dish.
- In a bowl, whisk olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
- Pour the mixture over the chicken and vegetables. Toss to coat evenly.
- Add chicken broth to the bottom of the pan.
- Bake uncovered for 45–55 minutes, basting halfway through, until golden and tender.
- Serve warm with extra pan juices drizzled on top. 😍
