This creamy baked pudding is pure comfort in every bite — golden, rich, and nostalgic. Perfect for holidays or any day you crave a taste of home.
Ingredients
- 2 cups cooked rice or small pasta (like macaroni)
- 2 cups whole milk
- 3 tablespoons butter, melted
- 1/2 cup granulated sugar
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon ground nutmeg or cinnamon (optional)
- 1/2 cup shredded coconut or grated cheese (optional — depending on sweet or savory preference)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a medium baking dish (about 1 quart size).
- In a large bowl, whisk together milk, eggs, sugar, vanilla, salt, and melted butter until well combined.
- Stir in the cooked rice (or pasta) and mix until evenly coated.
- Pour the mixture into the prepared baking dish and sprinkle with nutmeg or cinnamon if desired.
- Bake uncovered for 35–45 minutes, or until golden brown on top and set in the middle.
- Allow to cool slightly before serving warm. The top should be crispy and the inside creamy!
Tip: For extra richness, drizzle a bit of warm cream or condensed milk over each serving. It’s comfort food perfection!
