Grandma’s Creamy Baked Pudding

This creamy baked pudding is pure comfort in every bite — golden, rich, and nostalgic. Perfect for holidays or any day you crave a taste of home.

Ingredients

  • 2 cups cooked rice or small pasta (like macaroni)
  • 2 cups whole milk
  • 3 tablespoons butter, melted
  • 1/2 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg or cinnamon (optional)
  • 1/2 cup shredded coconut or grated cheese (optional — depending on sweet or savory preference)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a medium baking dish (about 1 quart size).
  2. In a large bowl, whisk together milk, eggs, sugar, vanilla, salt, and melted butter until well combined.
  3. Stir in the cooked rice (or pasta) and mix until evenly coated.
  4. Pour the mixture into the prepared baking dish and sprinkle with nutmeg or cinnamon if desired.
  5. Bake uncovered for 35–45 minutes, or until golden brown on top and set in the middle.
  6. Allow to cool slightly before serving warm. The top should be crispy and the inside creamy!

Tip: For extra richness, drizzle a bit of warm cream or condensed milk over each serving. It’s comfort food perfection!
