Grandma’s Chicken Fritters: A Hit with the Whole Family

These delightful chicken fritters are a family favorite, with the grandkids eagerly asking for seconds and even grandpa indulging in three! Easy to make and perfect for utilizing leftover chicken, these crispy patties are sure to become a staple in your household.

Ingredients

  • 25 oz leftover shredded chicken (or drained canned chicken)
  • 1 tsp Dijon mustard
  • 1 large egg
  • ⅛ tsp dried thyme
  • ¼ cup breadcrumbs
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • Salt and black pepper to taste
  • Oil for frying (vegetable or olive oil, enough to cover the bottom of the skillet)

Instructions

1. Prepare the Chicken Mixture

In a large bowl, combine the shredded chicken, Dijon mustard, egg, breadcrumbs, thyme, onion powder, garlic powder, salt, and pepper. Mix thoroughly until well combined.

2. Shape the Fritters

Using your hands, form the chicken mixture into small, evenly sized patties.

3. Heat the Oil

Heat a generous amount of oil in a skillet over medium heat until it shimmers.

4. Cook the Fritters

Fry the patties in the skillet for about 3-4 minutes per side, or until they develop a golden-brown, crispy exterior.
