Grandma’s 4-Ingredient Cheesy Potato Soup

This cozy potato soup is perfect for chilly days and always hits the spot.

Ingredients

  • 4 cups peeled potatoes, diced
  • 2 cups milk (or half & half)
  • 1 cup shredded cheddar cheese
  • Salt & black pepper, to taste

Instructions

  1. Add potatoes to a pot and cover with water. Boil until fork-tender.
    Drain most of the water, leaving a little in the pot.
  2. Lower heat and add milk. Gently mash some of the potatoes for a creamy texture.
  3. Stir in shredded cheddar cheese until melted and smooth.
  4. Season with salt and black pepper. Serve hot.
Tip: Add a small knob of butter or a splash of cream if you want it extra rich.
