German Potato Soup

German Potato Soup (Kartoffelsuppe)

A hearty, creamy, smoky German-style potato soup loaded with carrots, herbs, and sausage. Perfect for cold days!

Ingredients

  • 4 cups diced potatoes
  • 2 carrots, sliced
  • 1 onion, diced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream (or whole milk)
  • 8 oz smoked sausage (Kielbasa or German sausage), sliced
  • 2 tbsp butter
  • 1 tsp dried thyme
  • 1 tsp dried parsley (or fresh for garnish)
  • Salt and black pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Add onion, celery, carrots, and garlic. Sauté until softened.
  2. Add potatoes, thyme, salt, and pepper. Stir for 2 minutes.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes or until potatoes are tender.
  4. Add sliced sausage and simmer for another 10 minutes.
  5. Stir in the heavy cream and cook on low heat until warmed through.
  6. Taste and adjust seasoning.
  7. Serve hot topped with fresh parsley.

Tips

  • For extra creaminess, mash a few potatoes directly in the pot.
  • Use smoked German sausage for authentic flavor.
  • Great with crusty bread on the side.
