Garlic Herb Chicken and Potatoes
Golden roasted chicken with tender potatoes in a savory garlic-herb sauce — the perfect comfort meal for any night of the week!

Ingredients
- 4 bone-in, skin-on chicken thighs
- 4 medium potatoes, cubed
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 cup chicken broth
- 1 tbsp butter
- 1 tsp dried thyme (or 1 tbsp fresh)
- 1 tsp rosemary
- Salt and pepper to taste
- Chopped parsley for garnish
Directions
- Preheat oven to 400°F (200°C).
- Heat olive oil and butter in an oven-safe skillet.
- Season and sear chicken thighs until golden, then set aside.
- Add onion and garlic to the same pan, sauté until fragrant.
- Add potatoes and chicken broth, then nestle the chicken back in.
- Bake for 35–40 minutes until chicken is cooked and potatoes are soft.
- Garnish with parsley and serve warm.
