Easy Slow Cooker Beef, Potato & Cabbage Dinner


Easy Slow Cooker Beef, Potato & Cabbage Dinner

This hearty slow cooker meal is warm, comforting, and packed with tender beef, vegetables, and rich flavor — perfect for busy days!

Ingredients

  • 2 lbs beef chuck roast, cut into large chunks
  • 4–5 medium potatoes, halved
  • 3 large carrots, sliced into chunks
  • 3 celery stalks, chopped
  • 1/2 head cabbage, chopped
  • 1 onion, chopped
  • 4 cups beef broth
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper, to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Place potatoes, carrots, celery, onion, and cabbage into the bottom of the slow cooker.
  2. Add the beef chunks on top of the vegetables.
  3. Season with garlic, thyme, parsley, salt, and pepper.
  4. Pour beef broth over everything.
  5. Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is tender and vegetables are soft.
  6. Stir gently before serving and garnish with fresh parsley.

Prep Time: 15 minutes
Cook Time: 8–9 hours (slow cooker)
