Easy Rhubarb Dump Cake
This old-fashioned Rhubarb Dump Cake is sweet, tangy, and incredibly easy to make. Fresh rhubarb is layered with white cake mix, sugar, and melted butter, then baked until golden with a crisp buttery topping. It’s delicious served warm with vanilla ice cream.
Ingredients
- 5 cups fresh rhubarb, diced
- 1 box (15.25 oz) white cake mix
- 1 cup granulated sugar
- 1 cup (2 sticks) unsalted butter, melted
- 1 tsp vanilla extract (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Lightly grease a 9×13-inch baking dish.
- Spread the diced rhubarb evenly in the baking dish.
- Sprinkle the sugar evenly over the rhubarb.
- Evenly sprinkle the dry white cake mix over the top. Do not stir.
- Slowly drizzle the melted butter over the cake mix, covering as much of the surface as possible.
- If using, drizzle the vanilla over the top.
- Bake for 45–55 minutes, until the topping is golden brown and the rhubarb is bubbling around the edges.
- Let cool for 10 minutes before serving. Enjoy warm with whipped cream or vanilla ice cream.
