Easy Pinto Beans, Green Chile & Beef Soup ❤️

Ingredients:

  • 1 lb beef stew meat, cut into small cubes
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 can (4 oz) diced green chiles
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 cup chopped green bell pepper
  • 1 cup chopped celery
  • 4 cups beef broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • Fresh cilantro for garnish (optional)

Directions:

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add beef cubes, season with salt and pepper, and sear until browned.
  3. Add onions and garlic; cook until softened.
  4. Stir in green chiles, pinto beans, bell pepper, and celery.
  5. Add beef broth, cumin, chili powder, smoked paprika, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 1–1.5 hours, or until beef is tender.
  7. Taste and adjust seasoning.
  8. Garnish with fresh cilantro and serve warm.
