Easy One-Bowl Carrot Cake 🥕✨
This is the easiest carrot cake you’ll ever make — all in ONE bowl, super moist, perfectly spiced, and topped with creamy frosting. A true family favorite!
Ingredients:
For the Cake:
- 2 cups grated carrots
- 1 ½ cups all-purpose flour
- 1 cup sugar
- ½ cup brown sugar
- 2 large eggs
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg (optional)
- ½ tsp salt
- ½ cup crushed pineapple (optional)
- ½ cup chopped pecans or walnuts
- ½ cup raisins (optional)
For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- ½ cup butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Directions:
- Preheat oven to 350°F (175°C). Grease a round or square baking pan.
- In a large bowl, whisk together eggs, oil, sugars, and vanilla.
- Add flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix until just combined.
- Fold in grated carrots, nuts, raisins, and pineapple if using.
- Pour the batter into the pan and bake 30–35 minutes, or until a toothpick comes out clean.
- Let the cake cool completely.
- Beat together cream cheese, butter, powdered sugar, and vanilla to make the frosting.
- Spread over the cooled cake. Slice & enjoy!
