Easy Banana Custard Cake

Soft bananas baked under a rich custard-like batter create a moist,
golden cake that disappears fast. Perfect for kids, lunches, or a quick dessert.

Ingredients

  • 3–4 ripe bananas, peeled and halved lengthwise
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1/3 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a round 9-inch baking pan.
  2. Arrange the banana halves evenly on the bottom of the prepared pan.
  3. In a bowl, whisk together eggs and sugar until pale and smooth.
  4. Add milk, oil (or butter), and vanilla. Mix well.
  5. Stir in flour, baking powder, and salt until just combined.
  6. Pour the batter gently over the bananas.
  7. Bake for 40–45 minutes, until golden and a toothpick comes out clean.
  8. Let cool for 10 minutes, then turn out onto a plate or serve directly from the pan.
Tip:
This cake tastes great chilled or at room temperature. Wrap individual slices
for school lunches or drizzle with honey or caramel for a dessert twist.
