Easy Banana Custard Cake
Soft bananas baked under a rich custard-like batter create a moist,
golden cake that disappears fast. Perfect for kids, lunches, or a quick dessert.
Ingredients
- 3–4 ripe bananas, peeled and halved lengthwise
- 2 large eggs
- 1/2 cup granulated sugar
- 1/2 cup milk
- 1/3 cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat the oven to 350°F (180°C). Grease a round 9-inch baking pan.
- Arrange the banana halves evenly on the bottom of the prepared pan.
- In a bowl, whisk together eggs and sugar until pale and smooth.
- Add milk, oil (or butter), and vanilla. Mix well.
- Stir in flour, baking powder, and salt until just combined.
- Pour the batter gently over the bananas.
- Bake for 40–45 minutes, until golden and a toothpick comes out clean.
- Let cool for 10 minutes, then turn out onto a plate or serve directly from the pan.
Tip:
This cake tastes great chilled or at room temperature. Wrap individual slices
for school lunches or drizzle with honey or caramel for a dessert twist.
