This indulgent Reuben Bake takes everything you love about a classic Reuben sandwich
and turns it into a warm, cheesy, layered casserole. Rich corned beef, creamy dressing,
melty Swiss cheese, and tangy sauerkraut come together for the ultimate comfort food.

Decadent Reuben Bake with Swiss Cheese and Sauerkraut

🧾 Ingredients

  • 1 pound thinly sliced corned beef
  • 1 (16-ounce) can sauerkraut, drained and squeezed dry
  • 1 (8-ounce) package cream cheese, softened
  • ½ cup Thousand Island dressing
  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon black pepper
  • 8 slices Swiss cheese
  • 1 (16-ounce) loaf rye bread, sliced ½-inch thick

👩‍🍳 Directions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a medium bowl, mix cream cheese, Thousand Island dressing, Worcestershire sauce, and black pepper until smooth.
  3. Spread half of the cream cheese mixture evenly over the bottom of the prepared baking dish.
  4. Layer half of the corned beef slices over the cream cheese mixture.
  5. Spread the drained sauerkraut evenly over the corned beef.
  6. Layer the remaining corned beef slices on top.
  7. Spread the remaining cream cheese mixture evenly over the corned beef.
  8. Top with Swiss cheese slices, covering the entire surface.
  9. Arrange rye bread slices around the edges of the baking dish to create a “crust.”
  10. Bake for 20–25 minutes, until the cheese is melted and bubbly and the bread is lightly toasted.
  11. Let stand for 5 minutes before serving.
