🍞 Date and Walnut Loaf
Moist, nutty, and naturally sweetened — this classic Date and Walnut Loaf is a comforting bake that’s perfect with tea or coffee. Each slice is packed with rich flavor from dates and the satisfying crunch of walnuts.
🧾 Ingredients
- 2 cups (250g) all-purpose flour
- 1 cup (200g) chopped dates
- 1 cup (120g) chopped walnuts
- ¾ cup (150g) brown sugar
- ½ cup (120ml) vegetable oil or melted butter
- 1 cup (240ml) hot water
- 2 large eggs
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp vanilla extract

- Combine chopped dates and hot water in a bowl, then stir in baking soda. Let it sit for 10 minutes to soften the dates.
- In a large bowl, whisk together flour, baking powder, salt, and brown sugar.
- Add oil, eggs, vanilla extract, and the soaked date mixture. Mix gently until well combined.
- Fold in chopped walnuts, ensuring they’re evenly distributed in the batter.
- Pour the mixture into a greased and lined loaf pan.
- Bake in a preheated oven at 170°C (340°F) for 50–60 minutes or until a skewer inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
