Dark Chocolate Blackberry Cupcakes

Ingredients
For the Cupcakes
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/2 cup hot coffee (or hot water)
- 1 cup fresh blackberries
For the Blackberry Frosting
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2–3 tbsp blackberry puree
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a bowl, whisk flour, cocoa powder, baking soda, and salt.
- In another bowl, beat sugars, oil, eggs, and vanilla.
- Add dry ingredients alternately with buttermilk. Stir in hot coffee.
- Gently fold in fresh blackberries.
- Fill cupcake liners 2/3 full and bake 18–22 minutes.
- Cool completely before frosting.
- For frosting, beat butter until creamy. Add powdered sugar gradually.
- Mix in blackberry puree and vanilla until smooth and fluffy.
- Pipe frosting onto cooled cupcakes and garnish with a fresh blackberry.
