This hearty, savory meatloaf combines the rich flavors of caramelized onions, melted Swiss cheese, and tender beef for an unforgettable slow-cooked meal. Comfort food at its finest!
🧾 Ingredients
- 2 pounds ground beef
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk
- 2 large eggs
- 1 tablespoon Worcestershire sauce
- 1 packet onion soup mix
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon salt and 1/2 teaspoon black pepper
- 2 large onions, sliced and caramelized
- 6 slices Swiss cheese
- 2 tablespoons chopped parsley (for garnish)
👩🍳 Instructions
- In a large bowl, combine ground beef, breadcrumbs, Parmesan, milk, eggs, Worcestershire sauce, onion soup mix, garlic powder, thyme, salt, and pepper. Mix gently until well combined.
- Shape the mixture into a loaf and place it in the crockpot.
- Top with the caramelized onions and cover. Cook on Low for 6–7 hours or High for 3–4 hours.
- About 15 minutes before serving, layer Swiss cheese slices over the top and cover until melted and gooey.
- Garnish with chopped parsley and serve warm with mashed potatoes or roasted vegetables.
💡 Tip: For extra flavor, deglaze your onion pan with a splash of beef broth or white wine before adding them on top of the meatloaf.
