  • 4 large firm tomatoes
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Oil for frying (vegetable, canola, or olive)

Instructions:

1. Prepare the Tomatoes:

Slice the tomatoes into 1/2-inch thick rounds. Lightly season each slice with salt and pepper.

2. Set Up a Dredging Station:

  • Place the flour on a shallow plate.
  • In a separate bowl, beat the eggs.
