Crispy Fried Potatoes with Onions

Ingredients:

  • 2 pounds Russet potatoes, peeled and diced into 1-inch cubes
  • 1 onion, finely diced
  • 1/2 cup vegetable oil
  • Salt, pepper, and garlic powder to taste

Instructions:

  1. Begin by peeling and cutting the Russet potatoes into 1-inch cubes. Set aside.
  2. Finely dice the onion and keep it ready for cooking.
  3. In a 10-inch skillet, pour enough vegetable oil to generously coat the bottom. Heat the oil over medium heat until it reaches the right temperature.
  4. Carefully add the diced potatoes and onions to the skillet. Season generously with salt, pepper, and garlic powder. Stir well to ensure even seasoning.
  5. Cover the skillet and let the mixture cook undisturbed for about 10 minutes.
  6. After 10 minutes, uncover the skillet, stir, and flip the potatoes to promote even browning. Continue to cook uncovered for an additional 10-15 minutes or until the potatoes have reached your desired level of tenderness and a golden-brown color.
