Crispy Cheesy Potato Cakes 🥔🧀

Serves: 4–6
Ingredients
- 2 cups mashed potatoes (cold, leftover works best)
- 1/2 cup shredded mozzarella or cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 tbsp chopped parsley (fresh or dried)
- 1/4 cup flour (plus more for dusting)
- Salt and pepper to taste
- 2 tbsp butter or olive oil for frying
Instructions
- In a large bowl, combine mashed potatoes, cheeses, egg, flour, parsley, salt, and pepper.
- Mix until the dough holds together — if too sticky, add a bit more flour.
- Shape into small patties (about 2–3 inches wide).
- Heat butter or oil in a skillet over medium heat.
- Pan-fry each patty for 3–4 minutes per side, until golden brown and crispy.
- Drain on paper towels and sprinkle a little more parsley for garnish.
Tip: Add minced garlic, green onions, or a pinch of chili flakes for an extra flavor boost!
Serve hot with sour cream or garlic dip.
