Ingredients

  • 1 pound linguine pasta
  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1½ tablespoons Cajun seasoning
  • 4 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 8 ounces Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon kosher salt
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook linguine in salted boiling water until al dente. Drain and set aside.
  2. Season chicken evenly with Cajun seasoning.
  3. Heat olive oil and butter in a skillet over medium-high heat.
  4. Cook chicken until golden and fully cooked. Remove and slice.
  5. Lower heat and sauté garlic until fragrant.
  6. Add heavy cream and bring to a gentle simmer.
  7. Stir in Velveeta cubes until melted and smooth.
  8. Add mozzarella and Parmesan; stir until thick and creamy.
  9. Season with smoked paprika, black pepper, and salt.
  10. Toss linguine into the sauce until fully coated.
  11. Top with sliced Cajun chicken and garnish with parsley.
