Creamy Jam-Filled Coconut Balls

🍪 Ingredients

  • 1 ½ cups desiccated coconut (plus extra for rolling)
  • 1 can (14 oz) sweetened condensed milk
  • 1 tsp vanilla extract
  • ½ cup cream cheese, softened
  • ½ cup raspberry or strawberry jam
  • White chocolate (for coating)

🧁 Instructions

  1. In a large bowl, mix together the coconut, condensed milk, and vanilla until a soft dough forms.
  2. Take about 1 tablespoon of mixture and flatten it slightly in your hand.
  3. Add a small dollop of jam in the center and gently shape into a ball, sealing the edges.
  4. Place on parchment paper and freeze for 15–20 minutes to firm up.
  5. Melt white chocolate and dip each ball until fully coated.
  6. Roll in shredded coconut and let set on parchment paper until firm.
  7. Refrigerate for 1 hour before serving. Enjoy chilled!
