✨ Ingredients:

  • 4 chicken thighs or breasts 🍗
  • 2 tbsp olive oil
  • 3 cloves garlic, minced 🧄
  • 1 cup chicken broth
  • 1 cup heavy cream 🥛
  • 1 tsp dried Italian herbs 🌿
  • Salt & pepper to taste 🧂
  • 3 cups mashed potatoes 🥔
  • 2 cups carrots 🥕
  • 2 tbsp butter 🧈
  • Fresh parsley for garnish 🌱

🥣 Instructions:

  1. Season chicken with salt, pepper, and herbs. Sear in olive oil until golden brown, then remove from pan.
  2. Add garlic to pan, sauté 1 minute, then pour in chicken broth and cream. Simmer until thickened.
  3. Return chicken to sauce and let cook for 15 minutes until tender and coated.
  4. Meanwhile, boil carrots until soft, then toss with butter and herbs.
  5. Prepare mashed potatoes (buttery and smooth is best!).
  6. Serve chicken with sauce over potatoes, and carrots on the side. Garnish with parsley. 🌿
