✨ Ingredients:
- 4 chicken thighs or breasts 🍗
- 2 tbsp olive oil
- 3 cloves garlic, minced 🧄
- 1 cup chicken broth
- 1 cup heavy cream 🥛
- 1 tsp dried Italian herbs 🌿
- Salt & pepper to taste 🧂
- 3 cups mashed potatoes 🥔
- 2 cups carrots 🥕
- 2 tbsp butter 🧈
- Fresh parsley for garnish 🌱
🥣 Instructions:
- Season chicken with salt, pepper, and herbs. Sear in olive oil until golden brown, then remove from pan.
- Add garlic to pan, sauté 1 minute, then pour in chicken broth and cream. Simmer until thickened.
- Return chicken to sauce and let cook for 15 minutes until tender and coated.
- Meanwhile, boil carrots until soft, then toss with butter and herbs.
- Prepare mashed potatoes (buttery and smooth is best!).
- Serve chicken with sauce over potatoes, and carrots on the side. Garnish with parsley. 🌿
