🥣 Creamy Chicken and Dumplings

🧾 Ingredients
For the Soup
- 2 tbsp butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups cooked chicken, shredded or chopped
- 3 cups chicken broth
- 1 cup carrots, sliced
- 1 cup milk or half-and-half
- 1/2 cup heavy cream
- 1 tsp dried parsley
- 1/2 tsp dried thyme
- Salt and black pepper, to taste
For the Dumplings
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tbsp butter, melted
- 1/2 cup milk
👩🍳 Instructions
1️⃣ Start the Soup
- Melt butter in a large pot over medium heat.
- Add onion and cook until soft, about 3–4 minutes.
- Stir in garlic and cook for 30 seconds.
- Add carrots, chicken broth, chicken, herbs, salt, and pepper.
- Bring to a gentle simmer and cook for 10 minutes.
2️⃣ Make the Dumplings
- In a bowl, whisk flour, baking powder, and salt.
- Add melted butter and milk; stir until a soft dough forms.
3️⃣ Add Dumplings & Cream
- Stir milk and cream into the soup.
- Drop spoonfuls of dumpling dough into the simmering soup.
- Cover and cook for 15 minutes without lifting the lid.
4️⃣ Finish
- Check dumplings for doneness—they should be fluffy and cooked through.
- Taste and adjust seasoning.
