Creamy Baked Chicken Meatballs

A rich, cheesy, comforting dish featuring tender chicken meatballs baked in a creamy, flavorful sauce.

Ingredients

For the Meatballs:

  • 1 lb (450 g) ground chicken
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/3 cup grated Parmesan
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

For the Creamy Sauce:

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella
  • 1/2 teaspoon garlic powder
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking dish with foil and lightly grease.
  2. In a bowl, mix all meatball ingredients until well combined.
  3. Form into meatballs (about 12–14) and place on the baking dish.
  4. Bake for 18–20 minutes until lightly browned.
  5. Meanwhile, prepare the sauce: melt butter in a pan, whisk in flour, and cook 1 minute.
  6. Slowly add chicken broth and cream while whisking until smooth.
  7. Season with garlic powder, salt, and pepper. Simmer until slightly thickened.
  8. Stir in mozzarella until melted.
  9. Pour sauce over the baked meatballs and return to the oven for 10 minutes, or until bubbly and golden on top.
  10. Let rest for 5 minutes before serving.
