Creamy Baked Chicken Meatballs
A rich, cheesy, comforting dish featuring tender chicken meatballs baked in a creamy, flavorful sauce.
Ingredients
For the Meatballs:
- 1 lb (450 g) ground chicken
- 1/2 cup breadcrumbs
- 1 egg
- 1/3 cup grated Parmesan
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
For the Creamy Sauce:
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella
- 1/2 teaspoon garlic powder
- Salt & pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking dish with foil and lightly grease.
- In a bowl, mix all meatball ingredients until well combined.
- Form into meatballs (about 12–14) and place on the baking dish.
- Bake for 18–20 minutes until lightly browned.
- Meanwhile, prepare the sauce: melt butter in a pan, whisk in flour, and cook 1 minute.
- Slowly add chicken broth and cream while whisking until smooth.
- Season with garlic powder, salt, and pepper. Simmer until slightly thickened.
- Stir in mozzarella until melted.
- Pour sauce over the baked meatballs and return to the oven for 10 minutes, or until bubbly and golden on top.
- Let rest for 5 minutes before serving.
