This Creamy Almond Cake is a perfect blend of soft, fluffy cake layers and a luscious cream filling, topped with crunchy almond slices. A truly delightful treat that’s ideal for any occasion, whether served as a dessert or alongside a warm cup of coffee or tea.

Ingredients:

For the Cake:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt

For the Cream Filling:

  • 1 cup milk
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup almond paste (optional for enhanced almond flavor)

For the Topping:

  • 1/2 cup sliced almonds
  • Powdered sugar, for dusting

Instructions:

1. Preparing the Cake Batter:

  1. Preheat your oven to 350°F (175°C). Grease and line a square baking pan with parchment paper for easy removal.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually combine the dry ingredients with the butter mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just incorporated.

2. Creating the Cream Filling:

  1. Heat the milk in a saucepan over medium heat until it begins to steam, but ensure it does not boil.
  2. In a separate bowl, whisk together the sugar, cornstarch, and egg yolks until smooth.
  3. Slowly pour the hot milk into the egg mixture, whisking constantly to prevent the eggs from curdling.
  4. Return the mixture to the saucepan and cook over medium heat, stirring continuously, until it thickens and starts to bubble.
  5. Remove from the heat and stir in the vanilla extract (and almond paste, if using). Allow the cream filling to cool slightly.

3. Assembling the Cake:

  1. Pour half of the cake batter into the prepared baking pan.
  2. Evenly spread the cream filling over the batter.
  3. Top with the remaining cake batter, ensuring it covers the cream filling completely.
