A sweet-tart cranberry delight layered with crunchy pecans — festive, nostalgic, and absolutely delicious!

Ingredients
- 2 cups (200 g) fresh or frozen cranberries
- 1 cup (200 g) crushed pineapple, drained
- 1 cup (200 ml) boiling water
- 1 package (6 oz / 170 g) raspberry or cherry gelatin mix
- ¾ cup (150 g) granulated sugar
- ½ cup (60 g) chopped pecans
- ½ cup (60 g) diced celery (optional for crunch)
- 1 apple, finely diced 🍎
- Zest of 1 orange (optional, for a citrusy touch)
Instructions
- In a saucepan, bring cranberries and sugar to a gentle boil until cranberries start to pop. Remove from heat and cool slightly.
- Dissolve gelatin in boiling water in a large bowl. Stir until completely dissolved.
- Stir in the cranberry mixture, crushed pineapple, apple, and celery. Mix until evenly combined.
- Pour the mixture into a glass or ceramic dish.
- Chill in the refrigerator for at least 2 hours, or until firm.
- Before serving, sprinkle chopped pecans on top for a crunchy finish. 🥰
Tip: For an extra festive look, add a dollop of whipped cream or cream cheese topping before serving — it makes the colors pop! 🎄
