Cowboy Creamy Chicken, Spinach & Mushroom Bake
Juicy chicken breasts baked in a rich garlic cream sauce with tender mushrooms and fresh spinach.
This hearty, cheesy casserole is bold, comforting, and perfect for busy weeknights.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup heavy cream
- 1/2 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- 1 cup sliced mushrooms
- 3 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and black pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Heat olive oil in a skillet. Sauté mushrooms and garlic until tender. Add spinach and cook until wilted.
- In a bowl, combine heavy cream, cream cheese, mozzarella, Parmesan, paprika, thyme, salt, and pepper.
- Arrange chicken breasts in the baking dish.
- Top with sautéed vegetables.
- Pour creamy mixture evenly over chicken.
- Bake 35–45 minutes until chicken reaches 165°F internally and top is golden.
