Cowboy Casserole

Hearty, cheesy, and pure comfort food.

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 can (15 oz) pinto beans, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp chili powder
  • ½ tsp cumin
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add onion and garlic; sauté until fragrant.
  4. Add ground beef and cook until browned; drain excess fat.
  5. Stir in potatoes, beans, tomatoes, and all seasonings.
  6. Transfer mixture to a greased baking dish.
  7. Cover with foil and bake for 35–40 minutes, until potatoes are tender.
  8. Remove foil, sprinkle cheese evenly on top.
  9. Bake uncovered for another 10 minutes, until cheese is melted and bubbly.
  10. Garnish with parsley and serve hot.
Make it extra hearty by adding corn, bell peppers, or a splash of beef broth before baking.
