Cottage Cheese Cranberry Orange Breakfast Bake 🍊🧀

Ingredients (makes ~8 servings)
- 2 cups cottage cheese
- 1 cup rolled oats
- ½ cup dried cranberries
- ½ cup orange juice
- ¼ cup honey
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 2 large eggs
- 1 tablespoon orange zest
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch (23 cm) baking dish or line with parchment paper.
- In a blender, combine cottage cheese, oats, orange juice, honey, eggs, vanilla, baking powder, cinnamon, and salt. Blend until smooth and creamy.
- Stir in the orange zest and dried cranberries by hand (do not blend).
- Pour the mixture into the prepared baking dish and smooth the top evenly.
- Bake for 35–40 minutes, until golden and set in the center. A toothpick inserted should come out clean.
- Cool for 10 minutes before slicing. Serve warm, topped with a sprinkle of powdered sugar or fresh orange slices if desired.
