Cottage Cheese Cranberry Orange Breakfast Bake

Ingredients (makes ~8 servings)

  • 2 cups cottage cheese
  • 1 cup rolled oats
  • ½ cup dried cranberries
  • ½ cup orange juice
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 2 large eggs
  • 1 tablespoon orange zest

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch (23 cm) baking dish or line with parchment paper.
  2. In a blender, combine cottage cheese, oats, orange juice, honey, eggs, vanilla, baking powder, cinnamon, and salt. Blend until smooth and creamy.
  3. Stir in the orange zest and dried cranberries by hand (do not blend).
  4. Pour the mixture into the prepared baking dish and smooth the top evenly.
  5. Bake for 35–40 minutes, until golden and set in the center. A toothpick inserted should come out clean.
  6. Cool for 10 minutes before slicing. Serve warm, topped with a sprinkle of powdered sugar or fresh orange slices if desired.
