🍲 Comfort Chicken Noodle Soup

Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 cups egg noodles or rotini pasta
- 1 tsp dried thyme
- Salt and black pepper, to taste
- Fresh parsley (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5–6 minutes until softened.
- Stir in garlic and cook for 30 seconds.
- Pour in chicken broth and bring to a gentle boil.
- Add noodles, chicken, thyme, salt, and pepper.
- Simmer for 10–12 minutes until noodles are tender.
- Taste and adjust seasoning. Sprinkle with parsley if desired.
