Tender beef chuck roast slow-cooked to perfection with hearty potatoes and sweet carrots.

β¨ Ingredients:
- 3 lbs beef chuck roast (Halal-certified) π
- 2 tbsp olive oil
- 1 large onion, chopped π§
- 3 garlic cloves, minced π§
- 3 large carrots, peeled & cut into chunks π₯
- 2 lbs baby potatoes, halved π₯
- 3 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme πΏ
- 1 tsp rosemary πΏ
- Salt & pepper to taste π§
π₯ Instructions:
- Season the beef with salt and pepper. Sear in olive oil until browned on all sides.
- Add onion and garlic to the pot, sautΓ© until fragrant.
- Stir in tomato paste, thyme, rosemary, and beef broth.
- Add carrots and potatoes, cover tightly, and cook:
- Oven: 325Β°F (160Β°C) for 3β4 hours
- Slow cooker: Low 8 hours / High 5 hours
- Once fork-tender, shred the beef and serve with veggies and sauce. πΏ
