Classic Meatloaf with Roasted Potatoes

🛒 Ingredients
- 1½ lbs ground beef
- 1 cup breadcrumbs
- 1 small onion, finely chopped
- 2 eggs
- ½ cup milk
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- ½ cup ketchup or BBQ sauce
- 4–5 potatoes, cubed
- 2 tbsp olive oil
- 1 tsp paprika
👩🍳 Directions
- Preheat oven to 375°F (190°C).
- In a bowl, mix ground beef, breadcrumbs, onion, eggs, milk, and seasonings.
- Shape into a loaf and place in a baking pan.
- Brush the top generously with ketchup or BBQ sauce.
- Toss potatoes with olive oil, paprika, salt, and pepper.
- Arrange potatoes around the meatloaf.
- Bake for 60–70 minutes until fully cooked.
- Let rest 10 minutes before slicing.
