Ingredients

  • 6 medium potatoes, peeled and diced
  • 3 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream (optional for extra creaminess)
  • 1 tablespoon yellow mustard
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon sweet pickle relish (optional)
  • Salt and pepper, to taste
  • Paprika, for garnish

Instructions

  1. Place diced potatoes in a large pot, cover with water, and bring to a boil.
    Cook until tender but not mushy, about 10–12 minutes. Drain and cool slightly.
  2. In a large bowl, combine mayonnaise, sour cream, mustard, salt, and pepper.
    Mix well to create a creamy dressing.
  3. Add the cooled potatoes, chopped eggs, celery, onion, and relish.
    Gently fold everything together until evenly coated.
  4. Taste and adjust seasoning as needed.
  5. Cover and chill in the refrigerator for at least 1 hour before serving.
    Sprinkle with paprika just before serving for color.
Pro Tip: For extra flavor, add a splash of pickle juice or a spoon of Dijon mustard!
This salad gets even better the next day as the flavors meld together.
