This delightful quick bread combines the warmth of cinnamon with a soft, tender crumb, making it a perfect treat for breakfast or an afternoon snack.

Ingredients

For the Bread:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk

For the Cinnamon Sugar Topping:

  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • Melted butter for brushing (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.
  2. Prepare the Dry Ingredients: In a medium mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream the Butter and Sugar: In a separate large bowl, using a hand or stand mixer, cream the softened butter and sugar until the mixture becomes light and fluffy.
  4. Incorporate the Eggs and Vanilla: Beat the eggs into the butter mixture, one at a time, ensuring each is fully mixed before adding the next. Stir in the vanilla extract.
  5. Combine the Wet and Dry Ingredients: Gradually add the flour mixture to the wet ingredients, alternating with the milk. Begin and end with the dry mixture, and mix until just combined.
  6. Prepare the Cinnamon Sugar Topping: In a small bowl, mix together the granulated sugar and ground cinnamon for the topping.
  7. Assemble the Loaf: Pour half of the batter into the prepared loaf pan. Evenly sprinkle half of the cinnamon sugar mixture over the batter. Pour the remaining batter over the cinnamon layer, followed by the remaining cinnamon sugar. For a beautiful marbled effect, swirl a knife gently through the batter.
  8. Bake: Place the loaf in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool and Finish: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. If desired, brush the top of the loaf with melted butter and sprinkle with additional cinnamon sugar for an extra touch of sweetness.
