Christmas Frostbite Strawberry Crunch Cake



Christmas Frostbite 🎄🍓 Pound Cake

“The year Grandma forgot the strawberry crunch layer, Christmas felt a little less red, like a faded photograph.” ❤️🍰

Ingredients

  • 1 box (15.25 oz) white or vanilla cake mix
  • 1 (3.4 oz) box instant vanilla pudding mix
  • 4 large eggs
  • 1 cup sour cream
  • ½ cup vegetable oil
  • ½ cup milk
  • ½ cup strawberry preserves or puree
  • ½ tsp red gel food coloring (optional)
  • 1 cup crushed vanilla wafers or golden Oreos
  • 2 tbsp butter, melted
  • 1 cup powdered sugar + 2 tbsp milk (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a Bundt pan.
  2. Whisk cake mix and pudding mix together.
  3. Add eggs, sour cream, oil, and milk. Beat until smooth.
  4. Reserve ⅓ of the batter and mix with strawberry preserves and coloring.
  5. Layer plain batter, then strawberry batter, then top with the rest of the plain batter. Swirl lightly.
  6. Bake 55–60 minutes. Cool before glazing.
  7. Mix glaze and drizzle on top, then sprinkle with cookie crunch mix.
💡 Tip: Add crushed freeze-dried strawberries to the crunch topping for a stronger strawberry flavor and beautiful red texture!
